Bread Pudding

(Serves 4)

Ingredients

  • 2 cups cubed day-old French bread (about 3 slices)
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 can evaporated skim milk
  • 1/2 cup boiling water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 1/2 cup raisins
  • 2 teaspoons vanilla extract

Directions

Preheat the oven to 350 degrees.

Lightly spray or wipe a 1 1/2 quart baking dish with canola or vegetable oil. Place the bread cubes in the dish.

In a medium-size bowl, beat the eggs. Add the sugar, salt, and milk. Stir in 2 tablespoons of boiling water, then add the remaining 6 tablespoons water, cinnamon, nutmeg, raisins and vanilla. Pour the egg mixture over the bread cubes.

Bake the pudding until set, about 45 minutes. Serve warm, at room temperature, or cold.
