Wrong Mediterranean Chicken

I made this dish by accident when my cookbook was at my neighbor's house. She had made a similar dish and I decided to wing it. It turned out quite yummy!

Ingredients

  • 1 package of chicken breasts, defrosted and cut up into bite-size pieces.
  • 1 large or 2 small onions, sliced
  • 4-5 garlic cloves, coarsely chopped
  • olive oil
  • 1 jar of tomato sauce
  • 2 cups of chicken broth
  • 1 package of frozen artichoke hearts, defrosted
  • 12-18 pitted green olives, whole
  • fresh parsley, coarsely chopped
  • salt, pepper and dill to taste

Directions

In a medium-sized cooking pot, sauté the onion and garlic, using enough olive oil to make yourself happy. Add the chicken followed by the remaining ingredients and simmer on a low heat for a hour, or at least for as long as it takes for the chicken to be completely cooked. The chicken may be done sooner, but this will allow the flavors to really mix together. Eat.
